My story is very personal.  About 14 years ago, I was near death in a hospital in Houston, and nobody could figure out why.  A bunch of doctors finally walked in, and said, "we think you may have celiac disease".  Don't eat anything with gluten ever again--and they walked out.  

In two days, I was on my way to recovery, and in six weeks, I was a whole new person!  I shopped and cooked and learned all I could about the strange chemistry involved in gluten free baking--it's quite complicated, but I perservered.

I decided about 8 years ago, that there was a hole in the market with regard to gluten free foods.  There were some items out there, but they weren't very good.  I had developed a group of formulas that I thought were pretty good--and I started selling my gluten free baked goods to area restaurants and stores.  My very first grocery store was Central Market!  Then on to Sysco nationwide, H-E-B, Kroger, Albertson's and many more.
